- Cut the lettuce into bite-sized pieces. Wash, spin-dry and set aside.
- Put egg yolks in a large bowl and whisk until smooth. Add mustard, anchovies and garlic and mix. Gradually add olive oil. The mixture will become creamier by whisking and the addition of oil till the texture is similar to mayonnaise. Then add Worcester sauce and lemon juice.
- Add salad to the dressing. Every piece of salad should be lightly covered with the dressing. For the last step, add in croutons and parmesan and mix well.
For a protein add-in you can use chicken breast, bacon, shrimps or a steak. Enjoy!
